Coffee plants take 3–4 years to bear fruit. Grown at altitude under shade trees in India's Western and Eastern Ghats, they absorb the mineral complexity of volcanic soils and monsoon-fed rainfall.
We visit farms. We cup before we commit. Every origin in the Brew Club collection is chosen not for volume, but for character. The farms we work with share our obsession with process and provenance.
Only the ripest, reddest cherries are selected by hand. A single picker can harvest 45–90 kg per day. This labour-intensive step is what separates specialty from commodity.
The process defines the cup. Washed removes all fruit before drying — clean, bright. Honey retains some mucilage — sweet, full. Natural dries the whole cherry — complex, winey.
The process is where the flavour is born. We specify exactly which process we want — and why. Our Honey Series carries residual sweetness. Our Washed Series is defined by clarity. Our Monsoon Malabar is a category unto itself.
Beans are dried on raised beds or patio floors for 2–6 weeks until moisture reaches 11%. Then milled to remove the parchment layer — the final green bean emerges.
Every green bean lot is evaluated for defects, moisture, density, and screen size. We reject anything that doesn't meet our threshold. The roaster never touches a bad bean.
At our studio, green beans are roasted in batches of 5–10 kg. Each origin is profiled individually — we never compromise a natural with an espresso roast profile.
We roast to origin, not to format. An Araku natural isn't roasted the same as a Coorg washed. Each bean has a sweet spot — a rate-of-rise, a first crack time, a development window. We find it and we stay in it.
Roasted within 48 hours of dispatch. Sealed in nitrogen-flushed bags with one-way valves. Your cup arrives at peak freshness — never stale, never sitting in a warehouse.
Every roast batch is cupped by our team before release. Score below 82? Back to the drawing board. We'd rather discard a batch than ship mediocrity with our name on it.
